Carrot cakes – great cake rich in vitamins, minerals and antioxidants.
Ingredients for carrot cakes:
- 1/2 cup of regular flour
- 1/2 cup of self-raising flour
- 1/2 teaspoon bicarbonate soda
- 2 eggs
- 1/2 cup of canola oil
- 4 teaspoon of brown sugar
- 8 oz.of grated carrot
- 250 g walnut
- 1teaspoon of ground ginger
- 2 teaspoon of vanilla essence
- 1 teaspoon of cinnamon
- 50g butter
- 100g cream cheese
- 120 ml of lemon juice
- 1 cup of icing sugar
Put eggs, oil, vanilla essence, and sugar in a bowl and mix until combined. In another bowl, mix flour, baking soda, ginger, and lemon juice and mix with whipped cream. Then add the walnuts and carrots to the bowl. Then put everything from the first bowl and mix together and put in the loaf tin.
Preheat the oven to 400 F and place the loaf tin in the oven for 1 hour. Then take it out and cool. In the meantime, make a mixture of cream cheese and butter which you will put over the cake when it cools down and decorate the top of the cake to taste.
