Quinoa protein and fiber rich tomato soup
Ingredients for 2 persons (Quinoa Tomato soup):
- 1 leak
- 1 red onion
- 4 medium size tomato
- 1 pound of tomato Passata
- 1/2 teaspoon of salt
- dried basil
- 6 oz of quinoa
First, cut the onions and leeks and at the same time heat the oil in a frying pan. When the oil is heated to a moderate temperature, mix the two onions and fry them until glazed. At that point, take and put the quinoa in salt and pour over water (to swell a little). Put pepper and salt in the pan and add 4 tomatoes. After 5 minutes of cooking add the Passata and continue cooking for another 15 minutes. Then add the quinoa and cook for another 25 minutes. When the soup is cooked, serve in plates and add dried basil over.
