Ingredients for 2 person (soy salad with eggs):

  • 1 cup of sweet corn
  • 1 tomato
  • 5 oz. of tofu
  • 2 eggs
  • lettuce
  • 1 cup of green pea
  • salt and pepper
  • balsamic vinegar
  • olive oil
  • 1 scallion
  • 1/2 cucumber
  • 2 oz. breadcrumbs

PREPARATION (tofu salad with eggs):

The salad is easy to make. Chop all the vegetables into slices. Heat the oil in a pan and add the tofu for 5 minutes. Roll the tofu in breadcrumbs before frying. After 5 minutes of frying, place the tofu on a napkin to drain the oil. Put the remaining vegetables in a bowl and mix and season with salt and pepper. Drizzle the salad with balsamic vinegar. Finally add the tofu. The salad is ready to eat.
